Best Recipes to Kickstart 2022

Hello all, welcome to your ultimate guide to a year or a life full of delicious recipes. The following recipes will taste like a party in your mouth, not only because of their flavorful taste but also because of the joy you will feel when cooking them. In addition, their smell and impeccable appearance will make your heart smile, your eyes shine and your brain light up! The recipes include a mix of both sweet desserts and savory dishes perfectly tailored to fit your 2022 goals. 

Note: 

  • The recipes below are mostly made of whole ingredients. 
  • You can always substitute whole milk for plant-based milk if needed. 
  • Some recipes contain nuts or nut butter.

Breakfast: 

Heavenly European Breakfast Muesli

Serving: 1 person 

Ingredients: 

  • ¾ cup Alpen muesli original (no added sugar preferred) or Earth’s Goods Berry Muesli 
  • Whole milk (as much as your heart desires)  
  • A drizzle of honey 
  • 1 tablespoon peanut butter 
  • 1-2 handfuls of frozen blueberries 
  • Cinnamon (as much as your heart desires) 

Material Needed: 

  • A bowl
  • A spoon 
  • Measuring cups
  • Tablespoons 

Steps: 

  1. Place the muesli in a bowl.
  2. Add the frozen blueberries 
  3. Add the milk.
  4. Add the peanut butter.
  5. Add a drizzle of honey. 
  6. Add cinnamon and enjoy! 

Note: 

  • You can replace the honey and the peanut butter with jam, maple syrup, almond butter, cashew butter… 
  • You can also add coconut flakes, shredded coconut or nuts (the muesli may include those though) 
  • You can substitute whole milk with any milk of your choice. 
  • You can substitute frozen blueberries with any fruit of your choice (I prefer frozen fruit) 
  • You can use any muesli you like. However, the ones above are my favorites. 

Easy Wacky Weetabix 

Serving: 1 person 

Ingredients: 

  • 2 blocks of Organic Weetabix
  • ½ – ¾ cup of Greek yogurt 
  • 1-2 handfuls of frozen blueberries 
  • A large drizzle of honey 
  • 1 tablespoon of peanut butter 
  • Cinnamon (follow your heart for quantity) 

Material needed: 

  • A bowl
  • Measuring cups 
  • A spoon 
  • Tablespoons 

Steps: 

  1. Add the 2 Weetabix in a bowl.
  2. Add the yogurt on top.
  3. Add the frozen blueberries. 
  4. Add the peanut butter.
  5. Add the honey.
  6. Add the cinnamon and enjoy!  

Note: 

  • You can replace the yogurt with any yogurt of your choice (fruit yogurt, coconut yogurt, plant based yogurt…).  
  • You can substitute frozen blueberries with any fruit of your choice (I prefer frozen fruit).  
  • You can also add coconut flakes, shredded coconut or nuts. 
  • You can replace peanut butter and honey with maple syrup, jam, almond butter, cashew butter…). 

Lunch: 

Sweet Potato Avocado Toast 

Serving: 1 person  

Ingredients: 

Sweet potato base: 

  • One sweet potato
  • A drizzle of olive oil
  • Sea salt
  • Tropical pepper

Avocado spread: 

  • Half an avocado
  • A handful of tiny cut bell peppers
  • A handful of tiny cut grapes 
  • A splash of squeezed lemon 

Material needed: 

  • Cooking tray.
  • Parchment paper. 
  • Oven (obviously) 
  • A bowl 
  • A spoon 

Steps: 

  1. Preheat the oven to 175 degrees celsius.
  2. Prepare a baking tray with parchment paper.  
  3. Rince the sweet potato, peel it and cut it into ½ inch thick slices. 
  4. Place the sweet potato slices on the tray and drizzle the olive oil on top. 
  5. Sprinkle sea salt and tropical pepper on the sweet potato slices. 
  6. Place the sweet potato slices in the oven for 10 minutes. 
  7. Remove the sweet potato slices, flip them and put them back in the oven for another 10 minutes. 
  8. After 20 minutes, set the oven to broil and put the sweet potato slices in the oven for 3 minutes to get a toast-like texture. 
  9. When the sweet potato slices are done, let them cool for 5-10 minutes.  
  10. Mash half an avocado and add a splash of lemon juice.
  11. Add the bell pepper pieces and the grapes in the mashed avocado. 
  12. Sprinkle some salt and pepper on top of the avocado mix. 
  13. Spread the avocado mix on the sweet potato slices and enjoy! 

Note: 

  • This recipe is a very light lunch, I recommend you have some pretzels, popcorn or crisps on the side.
  • You can replace the bell peppers with cherry tomatoes.

Freekeh bowl

Serving: 1 person 

Ingredients: 

Base:

  • 4 serving spoons of boiled freekeh 
  • Sliced cherry tomatoes (as much as your heart desires) 
  • Sliced cucumbers (as much as your heart desires) 
  • 1-2 sliced dates 
  • Sliced halloumi cubes or slices of fresh mozzarella cubes, I prefer halloumi (as much as your heart desires) 
  • Sprinkle of sea salt 
  • Sprinkle of tropical pepper 

Dressing: 

  • Half a squeezed lemon
  • Drizzle of olive oil
  • Sprinkle of sea salt
  • Sprinkle of tropical pepper 

Material needed: 

  • A bowl 
  • A small bowl 
  • Serving spoons 

Steps: 

  1. Place the freekeh, sliced cherry tomatoes, cucumbers, sliced dates and sliced cheese in a bowl. 
  2. Sprinkle sea salt and tropical pepper on top of the freekeh. 
  3. In a small bowl mix the lemon juice, olive oil, salt and pepper. 
  4. Add the dressing to the freekeh bowl and mix well, enjoy! 

Note: 

  • Store the freekeh bowl in the fridge. 
  • You can replace sliced dates with cranberries or sliced dried apricots. 
  • Let the boiled freekeh cool before making the salad. 
  • You can replace freekeh with quinoa. 
  • You can grill the halloumi if desired. 
  • DON’T USE SHREDDED MOZZARELLA.
