Best Vegan Thanksgiving Recipes

Everybody loves Thanksgiving, one of the main things people love about this holiday is the traditional Turkey. Thankfully, there are various vegan alternatives for Thanksgiving dishes for fellow vegans to enjoy just as much.
The number one vegan recipe which is guaranteed a huge success is the vegan turkey stuffing. As the stuffing is the one of the favourite and most popular part of thanksgiving for most people, vegans aren’t able to partake in this amazing dish. This vegan turkey stuffing allows everyone to enjoy the turkey and thanksgiving all together. The duration of this dish will approximately take one hour and 40 minutes, and has eight servings.
INGREDIENTS
1 loaf of crusty country bread
Cooking spray
3 tbsp. extra-virgin olive oil
1 large onion, diced
4 stalks celery, thinly sliced
6 cloves garlic, minced
2 c. vegetable stock or water
Kosher salt
Freshly ground black pepper
3 sprigs thyme, stems removed
2 sprigs sage, finely chopped
1 sprig rosemary, finely chopped
DIRECTIONS
- The day before Thanksgiving, slice bread into 1 inch cubes and leave them out overnight to dry them out, or you could place the breads on a baking sheet and back them at 200º for 20 minutes.
- Preheat the oven to 350º and spray cooking spray on a baking dish. Heat some oil in a large skillet over a medium heat, and slice onions and add them in the pan. Cook the onions for 5 minutes. Later add celery and garlic and continue to cook, and occasionally mix until they begin to start looking translucent. Then add vegetable broth to the pan with the vegetables and remove any brown bits of vegetables with a wooden spoon, and season with salt and pepper.
- Add the sliced breads with the vegetables and the chopped herbs until they are well combined and transfer all to the prepared pan.
- Lastly, cover the pan tightly with foil and bake for 40 minutes. Once the 40 minutes are done, remove the foil and continue to bake until the vegan stuffing is golden brown and crisp on the top, which should be around 35 minutes more.
