Egg Inspired Breakfasts

Breakfast is the most important meal of the day, yet statistics show that 10% of the US population still skip breakfast every day! Here are some great egg-inspired breakfasts that will make you look forward to waking up in the morning. These are quick, easy and great for your daily dose of protein.

Spanish Omelette:


  • One egg
  • Half a Pepper
  • One mushroom
  • Half an onion
  • Five asparagus
  • Two cherry tomatoes
  • ½  cup of milk
  • Salt and pepper (for seasoning)
  • Mozzarella cheese
  • Olive oil


  1. Slice up the mushrooms, peppers and asparagus to the length of your choice
  2. Dice up the onions and the tomatoes
  3. Crack an egg into a mixing bowl, and whisk it up with ¼ to ½ a cup of milk. The milk is used to make your egg more fluffy and light
  4. Add all your vegetables and make sure that all the ingredients are combined well.
  5. Heat up your pan with a layer of olive oil
  6. Once your pan is hot, pour the egg mixture into the pan
  7. When you have flipped your omelette, sprinkle as much cheese as you want on top and cover the pan with a lid
  8. When all the cheese is melted, you can take the omelette out of the pan, place it on the plate, and fold it in half
  9. Toast a slice of bread and you are ready to go!



  • One egg
  • One slice of bread
  • One teaspoon of butter
  • Rock salt
  • Freshly ground pepper
  • Method:
  1. Using the rim of a glass, make a hole in the center of your bread.
  2. Next, pour some oil onto your pan or skillet, and put it on high heat.
  3. Once you pan is hot, melt some butter on it, but make sure it doesn’t burn.
  4. Place your bread in the pan once the butter has melted, and crack the egg in the hole.
  5. Once the underside of the egg has cooked for a while, about 30 seconds, sprinkle some rock salt and freshly ground pepper on top.
  6. Flip the whole thing, and sprinkle some more salt and pepper on the bottom (optional)
  7. Flip the egg again once it has cooked, and and place it on a plate if the yolk feels firm.
  8. Serve with a cup of tea and your breakfast is ready!

* One tip to not overcook it is to make sure your bread doesn’t burn and turn black.

Scrambled Egg Spanish Muffin


  • One egg
  • ¾ cup milk
  • ⅓ cup of butter
  • Salt (to season)
  • 1 ¾ cup white flour
  • 2 ½ tsp of baking powder
  • Half a pepper
  • 3-4 mushrooms
  • Half an onion
  • 4 asparagus
  • 3 cherry tomatoes
  • Salt and pepper (to season)
  • Mozzarella cheese (optional)


  1. Preheat your oven to 400 degrees F.
  2. Chop or dice up all your vegetables and keep them ready to the side.
  3. In a big bowl, whisk up all the dry ingredients (flour and baking powder).
  4. Add in the milk, egg and butter gradually
  5. Once completely mixed, add in all your vegetables.
  6. Season with the salt and pepper to your taste.
  7. Lay out some muffin cups in a baking tray and fill them about halfway with the mixture.
  8. Bake in the oven for about 20-25 minutes, and serve hot.

Croque Madame


  • Five tablespoons of butter
  • One tablespoon of flour
  • ⅔ cup milk
  • Salt and pepper (to season)
  • Nutmeg (optional)
  • Four slices of bread of your choice
  • Four slices of ham
  • Two slices of gruyere (or any other) cheese
  • Two eggs


  1. Preheat your griddle or sandwich toaster.
  2. In a small saucepan, melt one tablespoon of butter over low- medium heat for the bechamel sauce
  3. Once melted, add the flour and milk. Whisk until smooth.
  4. Shift to high heat and stir until thick. Add salt and nutmeg to taste.
  5. Once the sauce has cooled a bit, spread two slices of bread with the sauce.
  6. Top them with a piece of ham and cheese each.
  7. Place the two other pieces of bread on top of each sandwich.
  8. In a saucepan, melt the rest of the butter on a medium heat.
  9. Brush the sandwiches on both sides with the butter.
  10. Place each sandwich in your sandwich toaster and cook until toasted
  11. If you are using a skillet, brush the hot skillet with some butter and cook the sandwiches until they are crispy
  12. Fry two sunny side up eggs and place one on top of each croque madame. Your breakfast is ready!
